This full-time, salaried position is responsible for managing multiple large dining hall/retail food service locations effectively in order to support the educational mission of the university as well as the mission, goals, and objectives of Department of Housing, Dining, Recreation and Business Services. This person is responsible for coordinating various administrative aspects of Housing, Dining, Recreation and Business Services food operations. This position plans, organizes, and directs all activities of multiple large scale full-menu food service operations including a scratch preparation kitchen, multiple customer service stations for dine-in and take-out foods, and one or more dining locations. In addition, special projects will be assigned by the Director of Dining Services.
Characteristic Duties and Responsibilities – Essential Functions:
· Plans and manages the long range and day-to-day activities of food preparation and service functions in such a manner that it ensures an effective, efficient, and economical operation.
- Enforces university and departmental policies, work rules, performance standards, and codes of conduct.
- Works closely with the General Managers and Assistant Managers in the following areas:
- Gives direction and assistance to all staff in the preparation of all food and provision of service according to the high standards of the department and in accordance with the Ohio Revised Code and the Butler County Health Department.
- Demonstrates effective leadership.
- Enforces university and departmental policies.
- Maintains control over labor, food, supply, utilities, and other costs. Prepares various dining hall reports in a clear and accurate manner.
- Maintains staff scheduling across multiple units to ensure proper labor distribution in line with business needs.
- Communicates well with dining hall staff, fellow members of the food service management team, others within the university community, and the general public.
- Proficient use of computer programs including Microsoft Word, Microsoft Excel, Menu Management System, MICROS and Kronos.
- Sets a positive, enthusiastic tone for dining hall staff that is customer oriented.
- Actively seeks opinion about food and service.
- Merchandises products and services available to customers.
- Acts promptly and in a helpful manner when dealing with customer questions and concerns, including responding to written comments and suggestions.
Human Resource Development
- Develops staff in order to increase the effectiveness of each employee.
- Strives to make the dining hall a better place to work by improving the work environment.
- Delegates responsibility in order to motivate and develop subordinates.
- Conducts training for full and part-time employees and student staff in order to improve work performance and job satisfaction.
- Evaluates work performance of dining hall staff on a continual basis. Addresses discipline as needed.
- Pursues personal self-development in order to reach a higher level of professional competence.
- Associate’s degree in a related field (Hospitality Management, Culinary Arts, Dietetics, Management, etc.), 4-6 years of progressive experience in a restaurant or other food service operations or an equivalent combination of education and experience.
- Competent organizational and time management skills
- Familiarity with computer programs such as Microsoft Word and Excel
- Supervisory experience, with effective oral and written communications with among all levels of staff is required. Diplomatic communication is required and is an essential function of the job.
- Ability to organize and schedule work, to be flexible and adjust priorities, to keep records and files accurately, and to perform all aspects of the job efficiently and effectively, with attention to detail, to meet the needs of the Department of Housing, Dining, Recreation and Business Services is required.
- Ability to establish harmonious working relationships with peers, supervisors, other University personnel, students and the public; and to perform the above-described position independent of constant supervision is required. Ability to be self-directed is also required.
- Established records of excellent job performance, including attendance, that fully meet all applicable University and Departmental standards are mandatory.
- Bachelor’s degree in a related field
- Servsafe certification
- Certificate in a related field from a nationally recognized program (Foodservice Management Professional or the like)
